Love the convenience of a one dish meals, especially a hearty, filling and delicious soup. I like to make a big batch of soup for quick and healthy meal for the week ahead. All the ingredients in this soup are healthy and nourishing to the body, take fenugreek for example it’s loaded with iron, magnesium phosphorus, manganese and fiber. It helps improve digestion, helps relieve constipation, it’s anti-inflammatory, lowers cholesterol naturally and for breastfeeding moms it promotes milk production. Turmeric also has many incredible benefits so does cumin and all the veggies that are in this soup. .
- Minced garlic
- Cubed butternut squash
- Diced carrots
- Diced green zucchini
- Mushrooms (optional)
- Organic mixed beans
- Fenugreek seeds
- Ground flaxseeds ( to thicken the soup)
- Turmeric powder
- Green chili (optional)
- Salt and pepper
- Extra virgin olive oil
- In a pan add the oil, onions and garlic sautée until the onions are translucent, add the zucchini, butternut squash, carrots, mushrooms add all the seasonings and stir, making sure that all the veggies are coated. Add hot water ( depending on how much vegetables your cooking) just enough to cover all the veggies.
- When you can pierce a fork through the squash, take 2 scoops of the soup and blend it in a blender then add it back to the pot, this will give the soup a creamy and rich consistency.
- Lastly add the beans and spinach stir gently and voila your done!
